A traditional Central American dish
Though cooking reptiles isn’t common in many parts of the globe, Nicaragua and other Central American countries have a long history of eating green iguanas. There, you’ll find them in stews and roasted.

In Puerto Rico, they’re served in a soup with onions and tomatoes. As for Mexico, the first recorded mention of eating iguana traces back to Fray Sahagún’s history of colonial Mexico, written in the 16th century.
